Creme de Marrons

I’m feeling quite autumnal, despite the revival of summer which we seem to be having. This is mostly down to the huge sweet chestnut tree outside my flat which I’ve been foraging sweet chestnuts from in vast quantities. I’ve just finished making my third batch of creme de marrons from my finds! It is totally delicious with creme fraiche or fromage frais.

I saved another bag of chestnuts from the overenthusiastic gardener this morning and I plan to make this next lot into chestnut wagashi (Japanese sweets).
